Papa K's Rescue BBQ (Food Truck)7/2/2026 Admittedly, this particular meal took place in May. The summer has gotten very busy and time's just gotten away from me. Memorial Day weekend I had a show at Thousand Lakes Brewing just north of Alexandria. It's been a pretty wet summer, and this day was no different. We set up inside the taproom. I'm always optimistic about venues having food trucks and this one was parked front and center with a great menu to choose from. The real trouble with waiting six weeks to post a blog is that the details surrounding the trip are a little foggy. I know I went to North Dakota the next day. Hopefully, you're here more for the food review and less for the anecdotes.
Hopefully someone's here reading this at all... For a side, this was a large portion. They were served up in the food-truck-standard styrofoam cup. It works as well as anything. Right off the bat, you could see that this was a multi-bean offering. Appeared to be the usual navy bean coupled with a dark red kidney bean. These beans could have used a little more time cooking. They were still just a little...to the tooth. This, in my opinion, is preferable to an overcooked bean. This is telling me that the folks in this kitchen are making this dish from scratch. They're not just dumping cans of Bush's and calling it good. To accompany the beans in this dish they added finely diced onions and peppers. A touch of sweetness from the peppers and savoryness from the onions. In addition to those vegetables, they also included (to my knowledge) diced mushrooms. Another layer of flavor and texture, though this was one I had never seen before. All the beans, vegetables, and fungi were stewed in a thin sauce. It was a very sweet sauce that tasted of molasses. It wasn't a straight sweetness, however. You could detect some notes of bitterness in the sauce and a touch of heat on the backend. Not my favorite sauce for baked beans, but it was an interesting take on the traditional.
